- 3 tbsp. flour
- 2 cups milk
- Salt
- Freshly ground white pepper
- Pinch of nutmeg
- 1/2 cup grated Parmigiano-Reggiano cheese
Braised Red Cabbage

1. Fry the bacon in a pan 2
- l.5 lbs. Shredded Red Cabbage
- 1 cup chopped onion
- 5 slices diced bacon
- 2 cloves minced garlic
- 1.5 cups chopped celery
- .5 cup granulated sugar
- .5 cup vinegar
- .75 cups current jelly
- 3 cups chicken broth
- 1 teaspoon caraway seeds
- 1 large sliced granny smith apple
Chopped Liver

Sautee livers in chicken fat or margarine until just browned
- 1 lb. Chicken livers
- 3 large hard boiled eggs
- 4 medium onions
Brisket

Sprinkle both sides of brisket with pepper and brown on both sides in pot

- 1 medium sauteed onion
- 2 Tbs. lemon juice
- 2 Tbs. brown sugar

Cold Sesame Noodle Salad

Boil, rinse, drain pasta. Peel, seed, and cut cucumber into 1/4" dice
- 1/2 lb. linguini
- 3 cloves garlic
- 1 Tbs. red wine vinegar
- 1 Tbs. brown sugar
- 3 oz. peanut butter
- 1/4 cup soy sauce
- 3 oz. toasted sesame oil
- Hot chili oil (to taste)
- 2 oz. sesame seeds
- 1/4 cup scallions
- 1/4 lb. cucumber
Honey Lemon Chicken

Dredge dry chicken pieces in flour mix
- 3 lbs chicken pieces
- 1/2 cup flour
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 stick butter
- 1/4 cup honey
- 1/4 cup lemon juice
- 1 Tbsp. soy sauce
Lentil Soup

- 12 carrots
- 4 potatoes
- 5 stalks celery
- 1/2 lb. bacon

Caponata

- 4 Tbs. Drained capers
- 12 pitted olives cut in slivers

- 1 stick unsalted butter
- 6 slices white bread-crustless-torn onto 1/4" pieces
- 5 1/2 cups milk
- 1/2 cup all purpose flour
- 2 tsp. salt
- 1/4 tsp fresh grated nutmeg
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (to taste)
- 4 1/2 cups (18 oz.)grated sharp white cheddar cheese
- 2 cups (8oz) grated Gruyere or 1 1/4 cups (5 oz.)pecorino romano
- 1 lb. elbow macaroni
