Ginger Mint Preggo Candy

Peel and dice your fresh ginger
- 2/3 c fresh ginger
- 1/3 c fresh mint (can sub sliced lemon peel for mint)
- 2 1/2 c water
- 2 c sugar
- 2 tbsp corn syrup
- package powdered sugar or candy mold
Caramel Sauce

Place sugar in a small heavy sauce pan
- 1 cup sugar
- 1/4 cup water
- 8 tablespoons unsalted butter, cut into pieces
- 1/2 cup heavy cream
- 2 teaspoons vanilla
- pinch of salt
Split Pea Soup

In a large stock pot, cover peas with 2 quarts cold water and soak overnight
- 2 1/4 cups dried split peas
- 2 quarts cold water
- 1 1/2 pounds ham bone or ham hock
- 2 onions, thinly sliced
- 1 clove garlic
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 pinch dried marjoram
- 1 bay leaf
- 3 stalks celery, chopped
- 3 carrots, chopped
- 1 potato, diced
Pumpkin-Beer Bars with Streussel Topping

Preheat oven to 350°F. Lightly grease a 9×13-inch shallow baking pan or jelly roll pan
- Bars:
- 1 box yellow cake mix
- 1 cup amber beer
- 1 teaspoon cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of ginger
- 3/4 cup pumpkin puree
- 1 teaspoon vanilla extract
- Streussel:
- 1/4 cup sugar
- 1/4 cup rolled oats
- 2 tablespoons all-purpose flour
- 2 tablespoon butter, cut into pieces
- Icing
- Powdered sugar, vanilla extract, ground cinnamon and milk to reach drizzling consistency.
Warm Cabbage Salad in Bacon Viniagrette

Chop the bacon into small pieces and cook over medium-high heat until crispy
- 6-8 ounces of bacon, chopped small
- 1 cup water
- 1/2 cup apple cider vinegar
- 2 teaspoons cornstarch
- Half cup cold water for cornstarch slurry
- 3 tablespoons sugar
- 1 medium head of cabbage, sliced thin
- 1 cup of shredded carrots

Instant Rice Pudding

- 1 cup instant rice
- 4 cups fat-free milk
- 1 egg
- 1 package (.8 oz.) Jell-O Cook & Serve sugar-free, fat free vanilla pudding mix
- 1 t vanilla extract (can use coconut also)
