  • Essence(Emeril's Creole Seasoning):
  • 1/2 cup all-purpose flour
  • 1 T. Essence, recipe follows
  • 2 (6 to 8 oz) boneless, skinless chicken breast cut in halves and pounded thin
  • 1 T. olive oil
  • 4 T. butter
  • 3 cups sliced mushrooms (cremini, oyster, shiitake)
  • 3/4 cups Marsala
  • 1 cup cicken stock
  • salt & freshly ground black pepper
  • Chopped chives, for garnish
  • 2 1/2 T. paprika
  • 2 T. salt
  • 2 T. garlic powder
  • 1 T. black pepper
  • 1 T. onion powder
  • 1 T. cayenne pepper
  • 1 T. dried leaf oregano
  • 1 T. dried thyme
  • Combine all ingredients and store in air tight container. Yield 2/3 cups
