FRIED GREEN BEANS

Preheat oil to 375 degrees F
- • Peanut oil, for frying
- • 1 cup beer
- • 1 cup all-purpose flour
- • 2 teaspoons salt, plus more for seasoning
- • 1/2 teaspoon ground black pepper, plus more for seasoning
- • 1 pound green beans, ends trimmed
TURKEY WITH STUFFING

- • 1 (10 to 12-pound) turkey, with giblets removed
- • 1 quart chicken broth
- • 2 ounces dried mushrooms
- • 1 cup chopped onion
- • 1 cup chopped celery
- • 1 cup chopped green pepper
- • 1 tablespoon vegetable oil, plus extra for rubbing on turkey
- • 1 tablespoon kosher salt, plus extra for seasoning turkey
- • 3 cups Challah bread, cut into 1/2-inch cubes (from approximately 4 to 5 slices)
- • 4 ounces unsweetened dried cherries, approximately 1 cup
- • 2 ounces chopped pecans, approximately 1/2 cup
- • 2 whole eggs, beaten
- • 2 teaspoons dried rubbed sage
- • 2 teaspoons dried parsley
- • 1/2 teaspoon freshly ground black pepper, plus extra for seasoning chicken

TURKEY HASH

In medium saute pan, add 2 ounces olive oil, onions, peppers and saute until translucent
- • 4 ounces olive oil
- • 2 red onions, diced
- • 1 red bell pepper, julienne
- • 1 green bell pepper, julienne
- • 2 jalapenos, diced, and seeded
- • 2 pounds ground turkey breast
- • 1 teaspoon salt
- • 2 teaspoons freshly ground black pepper
- • 2 pounds red potatoes, sliced thin
- • 1/2 cup Roma tomatoes, diced
- • 1/2 lime
APPLE-SAGE GLAZED GRILLED WHOLE TURKEY WITH GRILLED APPLES

Preheat the grill to medium-high
- • 1 tablespoon canola oil, plus more for brushing on the turkey
- • 1 small red onion, coarsely chopped
- • 1 serrano chile, coarsely chopped
- • 3 cups apple cider vinegar
- • 1 1/2 cups granulated sugar
- • 2 Granny Smith apples, peeled, cored, and coarsely chopped, plus 2 peeled, cored, and sliced into 1/2-inch thick slices
- • 3 tablespoons chopped fresh sage leaves
- • Salt and freshly ground pepper
- • 1 whole (20 pound) turkey
JERK RUBBED CHICKEN THIGHS WITH HOME-MADE MANGO-HABANERO HOT SAUCE

Combine all spices in a small bowl
- Jerk Rub:
- • 2 tablespoons ground coriander
- • 2 tablespoons ground ginger
- • 2 tablespoons light brown sugar
- • 1 tablespoon onion powder
- • 1 tablespoon garlic powder
- • 1 tablespoon kosher salt
- • 1 tablespoon cayenne powder
- • 2 teaspoons coarse black pepper

- • 1 teaspoon cinnamon

- Homemade Mango-Habanero Sauce:
- 1 tablespoon canola oil
- 1 small Spanish onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 ripe mangoes, peeled, pitted and coarsely chopped
- 1 habanero, chopped
- 1 cup white wine vinegar

CHICKEN CHILI

Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent
- For serving:
- • 4 cups chopped yellow onions (3 onions)
- • 1/8 cup good olive oil, plus extra for chicken
- • 1/8 cup minced garlic (2 cloves)
- • 2 red bell peppers, cored, seeded, and large-diced
- • 2 yellow bell peppers, cored, seeded, and large-diced
- • 1 teaspoon chili powder
- • 1 teaspoon ground cumin
- • 1/4 teaspoon dried red pepper flakes, or to taste
- • 1/4 teaspoon cayenne pepper, or to taste
- • 2 teaspoons kosher salt, plus more for chicken
- • 2 (28-ounce) cans whole peeled plum tomatoes in puree, undrained
- • 1/4 cup minced fresh basil leaves
- • 4 split chicken breasts, bone in, skin on
- • Freshly ground black pepper

GRILLED PIZZA WITH HOT SAUSAGE, GRILLED PEPPERS AND ONIONS AND OREGANO RICOTTA

Preheat a grill. Grill the sausage on both sides until golden brown and cooked through, about 10 minutes per side
- Basil Vinaigrette:
- • 1/2 pound Italian hot sausage
- • 1 large red onion, cut into 1/4-inch thick slices
- • 2 large yellow pepper, cored, seeded and quartered
- • 2 large red pepper, cored, seeded and quartered
- • Olive oil
- • Salt and pepper
- • 1 recipe favorite pizza dough, rolled into 4 (6-inch) rounds

Goat Cheese Macaroni and Cheese

Grease a 2-quart baking dish
- • 8 ounces elbow macaroni (about 2 cups raw)
- • 2 tablespoons butter
- • 2 tablespoons flour
- • 2 cups milk, 2% is fine
- • 1 to 2 tablespoons fresh chopped mixed herbs, or 2 teaspoons dried leaf herbs (thyme, sage, chives, etc.)
- • 1/2 teaspoon salt, or to taste
- • 1/4 teaspoon ground black pepper
- • 4 ounces goat cheese with herbs or plain
- • 8 ounces sharp cheddar cheese, shredded
- • 4 ounces shredded Parmesan cheese, divided
- • 1 cup soft bread crumbs
