Flourless Chocolate Cake

Using 1/2 tablespoon butter grease a 9-inch springform pan and line bottom with a parchment round
- 1 pound semisweet chocolate, coarsely chopped
- 1/2 pound (2 sticks) unsalted butter, cut into 1/2-inch cubes, plus 1/2 tablespoon
- 1/4 cup Kahlua
- 8 large eggs
- 1/4 cup sugar
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- Confectioners' sugar or cocoa powder, for garnish
- Fresh raspberries, for garnish
Ravioli with Arugula & Pecorino

1.Bring a large pot of water to a boil
- 1 pound fresh or frozen cheese ravioli, preferably whole-wheat
- 1 large clove garlic, minced
- 1/2 teaspoon kosher salt
- 1/4 cup extra-virgin olive oil
- 2 large shallots, sliced
- 3 tablespoons red-wine vinegar
- 1 teaspoon Dijon mustard
- Freshly ground pepper to taste
- 6 cups arugula
- 1/2 cup shaved Pecorino Romano or Parmesan cheese (see Tip)
Grilled Eggplant & Portobello Sandwich
