Quick Omega 3 Granola

Preheat oven to 350°F. Brush heavy large rimmed baking sheet with 2 tablespoons oil
- 4 tablespoons walnut oil, divided
- 3/4 cup (packed) dark brown sugar
- 1/4 cup egg whites
- 1/2 teaspoon (scant) coarse kosher salt
- 3 cups organic old-fashioned oats
- 1 cup walnut halves, broken in half
- 1/2 cup flaxseed meal*
- 1 cup pitted dates, coarsely chopped or torn into pieces
- 1/4 cup honey
Ziti with Sausage, Mushroom and Cognac

1. Remove casings from sausages and discard
- 3 ⁄4 lb. mild Italian sausage
- 2 cloves garlic, peeled and finely chopped
- 1 ⁄4 cup cognac
- 1 ⁄2 lb. cremini mushrooms, sliced

Lentil and coconut soup

Heat a large saucepan over medium heat and cook the bacon for 4-6 minutes until golden
- 8 thick bacon rashers, cut into 1cm strips
- 1T EVOO
- 2 large leeks, white part only, sliced
- 4 garlic cloves, finely chopped

- 1c red lentils, rinsed, drained
- 1L chicken or vegetable stock
- 400g can coconut milk
- Juice of 1 lime, plus wedges to serve
- 1 long red chili, sliced

Thai Fried Rice

Mince garlic with salt. Heat oil in a wok and fry garlic until fragrant and beginning to colour

Soak bamboo skewers in water

- 1 tablespoon olive oil
- 1 medium onion, diced (about 1 1/2 cups)
