Blueberry Tart

For the pastry, place flour, butter and sugar in a processor with a pinch of salt
- 120 g softened unsalted butter
- 150 g caster sugar
- 2 eggs
- 2 T brandy
- 200 g almond meal
- 2 125g punnets blueberries (or any berry)
- Icing sugar to dust
- Thick cream to serve
- Shortcut Pastry
- 1 2/3 c AP
- 100 g chilled unsalted butter, chopped
- 100 g caster sugar
- 2 egg yolks, plus 1 beaten egg to brush
Orange and Yoghurt Pancakes

For the compote, place berries, sugar and lemon juice in a pan over low heat
- Mixed berry compote:
- 2 oranges, plus segments to serve
- 5 eggs, separated
- 3/4 c caster sugar, plus 2 extra to serve
- 200 g thick Greek-style yoghurt, plus extra to serve
- 1 1/3 c AP, sifted
- 20 g unsalted butter, melted
- honey, to serve
- 250 g frozen mixed berries
- 1/2 c caster sugar
- squeeze of lemon juice
- 2 t shredded mint
Pumpkin and Squash Salad with Labne

Preheat oven to 200C. Combine pumpkin and oil in a roasting pan, then season with salt and pepper
- Labne
- 1 butternut pumpkin, peeled, seeded, and cut into 3 cm pieces
- 60 ml olive oil, plus extra to drizzle
- 8 yellow squach
- 50 g pepitas, toasted
- 2 T finely chopped preserved lemon
- 1/2 c coriander leaves, plus extra, to serve
- 1/2 c dill sprigs, plus extra to serve
- 1/2 c mint leaves, plus extra, to serve
- 3/4 c plus 2T Harissa
Beef Satay

Combine marinade ingredients and add beef
- 125 ml light soy sauce
- 90 g honey
- 1 orange juiced
- 3 garlic cloves, crushed
- 3 cm piece ginger, finely grated
- 2 T vegetable oil, plus extra to cook
- 1 t sesame oil
- 800 g piece beef sirloin, cut into strips
- Coriander and steamed rice to serve
Irish Soda Bread

Preheat the oven to 375 degrees F
- 4 cups all-purpose flour, plus extra for currants
- 4 tablespoons sugar
- 1 teaspoon baking soda
- 1 1/2 teaspoons kosher salt
- 4 tablespoons (1/2 stick) cold unsalted butter, cut into 1/2-inch dice
- 1 3/4 cups cold buttermilk, shaken
- 1 extra-large egg, lightly beaten
- 1 teaspoon grated orange zest
- 1 cup dried currants
Iced white tea with rose and mint

1 Bring 1.5 litres water to just below the boil in a saucepan
- 6 organic white tea bags
- 2 bunches of mint
- 250 gm caster sugar
- 2 tbsp rosewater, or to taste
- To serve: raspberry ice cubes (see note)
Southern Coconut Curry of Barramundi

Paste: Soak chilies in water for 10 minutes or until softened slightly
- 1 t grated palm sugar, plus extra pinch
- 1 lemongrass stem, pale part bruised
- 6-8 thin slices galangal
- 2-3 kaffir lime leaves
- 200 g barra, roughly chopped
- 2 t fish sauce
- 300 ml coconut cream, plus extra to serve
- juice of 1 lime
- Curry paste
- 3 dried long red chillies, seeds removed
- 2 small dried red chillies,
- 3 small red chillies
- 1 cm piece peeled galangal, thinly sliced
- 2 T finely chopped lemongrass
- 1 garlic clove
- 1 cm piece fresh turmeric, peeled thinly sliced
- 1 T wild ginger
- 1 T shrimp paste
MIKE MILLS' BEEF RIBS

Mix all ingredients and store in a tightly covered container
- Magic Dust:
- • 1/2 cup paprika
- • 1/4 cup kosher salt, finely ground
- • 1/4 cup sugar
- • 1/4 cup powdered mustard
- • 1/4 cup chilli powder
- • 1/4 cup ground cumin
- • 2 tablespoons ground black pepper
- • 1/4 cup granulated garlic
- • 2 tablespoons cayenne pepper
- Jack Daniel's Rib Glaze Ingredients:
- • 1 cup Jack Daniel's Whiskey
- • 1 cup ketchup
- • 1/2 cup dark brown sugar
- • 1/4 cup vinegar
- • 1 tablespoon lemon juice
- • 2 teaspoons Worcestershire sauce
- • 3 cloves garlic, minced
- • 1/2 teaspoon dry mustard
- • salt and pepper to taste
Fruit n Nut Granola

Preheat oven to 325°. Combine the first 4 ingredients in a large bowl, and stir mixture well
- 4 cups regular oats
- 1/2 cup sliced almonds
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/3 cup honey
- 1/3 cup molasses
- 1/3 cup water
- 2 tablespoons vegetable oil
- Cooking spray
- 1 cup chopped pitted dates
- 1 cup raisins
Corned Beef and Cabbage

Preheat the oven to 300 degrees F
- 1 (3-pound) corned beef brisket (uncooked), in brine
- 16 cups cold water
- 2 bay leaves
- 2 teaspoons black peppercorns
- 4 whole allspice berries
- 2 whole cloves
- 1/2 large head green cabbage (about 2 pounds), cut into 8 thick wedges
- 8 small new potatoes (about 1 1/4 pounds), halved
