Greek Salad

Toss first five ingredients in a bowl
- 1 (14oz) can Artichoke Hearts, drained and quartered
- 1 large Cucumber, peeled, halved lengthwise and sliced crosswise
- 2 medium Tomatoes. cut into wedges
- 1 small Sweet Onion, halved and sliced
- 1/2 jar Kalmata Olives sliced in half
- 5 Tbsp Olive Oil
- 2 1/2 Tbsp White Wine Vinegar
- 1 1/2 tsp Dried Oregano
- 1/2 cup Crumbled Feta Cheese
- 6 cups Assorted Salad Greens, washed, dried and chopped or torn
Beef and Brocoli Weight Watchers

- 2 1/2 Tbsp Cornstarch, divided
- 1/4 tsp salt
- 3/4 lb Lean Sirloin Beef, trimmed, thinly sliced against the grain
- 2 tsp canola oil
- 1 cup Reduced Sodium Chicken Broth, divided
- 5 cups Broccoli Florets (12 oz bag)
- 1 Tbsp Ginger Root, fresh, minced
- 2 tsp Minced Garlic
- 1/4 tsp Red Pepper Flakes, or to taste
- 1/4 cup Low Sodium Soy Sauce
- 1/2 cup water
Grilled Salmon

- 1/2 Cup Orange Marmalade
- 1 Tbsp Dijon Mustard
- 1/2 tsp Salt
- 1/2 tsp Garlic Powder
- 1/4 tsp Pepper
- 1/8 tsp Ground Ginger
- 4 6oz Salmon Fillets

- 2 Eggs
- 2 Tbsp Milk
- 2 Tbsp Cheese
Honey-Mustard Roasted Salmon Weight Watchers

- 1 1/2 lb Pink Salmon fillets, four 6oz pieces, about 1 inch thick
- 1/8 tsp Salt
- 1/8 tsp Black Pepper
- 1/4 cup Dijon Mustard
- 2 Tbsp Honey
- 1 Tbsp Water
- 1 Tbsp White Wine Vinegar
- 1/4 tsp Dry Mustard
- 1/4 tsp Garlic Powder
- 2 tsp Dill, fresh, chopped
Honey Mustard Mozzarella Chicken

- 4 Skinless, Boneless Chicken Breasts
- 3/4 cup Honey
- 1/2 cup Mustard
- Lemon Pepper
- 4 Bacon Slices, cut in half
- 1 cup Mozzarella Cheese, shredded
