Chocolate Chip Cookies

1. Heat oven to 375 2. Combine shortening, brown sugar, milk and vanilla in large bowl
- 3/4 c. Butter Flavored Crisco
- 1 1/4 c. light brown sugar, firmly packed
- 2 Tbsp. milk
- 1 Tbsp. vanilla
- 1 egg
- 1 3/4 c. all-purpose flour
- 1 tsp. salt
- 3/4 tsp. baking soda
- 1 c. semi-sweet chocolate chips
- 1 c. coarsely chopped nuts (optional)
Pasta Primavera

1. Melt butter over medium heat
- 1/2 c. butter
- 1 onion, chopped fine
- 1 clove garlic, minced
- 1/2 lb. mushrooms
- 1/2 lb. green beans
- 1 c. whipping cream
- 1/2 c. chicken broth
- 2 Tbsp. basil
- 1 c. peas
- Salt
- Pepper
Round Steak and Rice

1. Brown beef in vegetable oil in skillet
- 1 1/2 lbs. round steak, cut into thin strips
- 1 c. converted rice
- 1 can beef broth or chicken broth
- 1 can water
- 3 Tbsp. soy sauce
- 2 green bell peppers, coarsely chopped
- 1 Tbsp. minced dried onion
- 1 jar diced pimiento, drained
Tortilla Soup

1. Saute onion, green chili and garlic in oil 2
- 1 onion, chopped
- 1 can (4 oz) chopped green chiles
- 1 clove garlic, minced
- 2 Tbsp. oil
- 1 can (10 1/2 oz) chicken broth
- 1 can (10 1/2 oz) beef broth
- 1 1/2 c. tomato juice
- 1 1/2 c. water
- 1 can (15 oz) diced tomatoes
- 1 tsp. cumin
- 2 Tbsp. chili powder
- 1 tsp. salt
- 1 c. fresh corn, optional
- Shredded chicken, roasted chicken from store
- 1/4 c. grated cheese, Montery Jack or Cheddar
Country-Style Pot Roast (aka Brisket)

- 4 pounds brisket of beef, trimmed well
- Salt
- Pepper
- Garlic powder
- 1 envelope dry onion soup mix
- 1 (12 oz) can beer
- 1/2 cup catsup
- 8 oz whole berry cranberry sauce
Fettuccine Alfredo

1. Bring a large saucepan of water to a boil
- 3/4 cup(s) vegetable broth, or reduced-sodium chicken broth (see Tips for Two)
- 4 garlic, peeled
- 4 ounce(s) whole-wheat fettuccine
- 1 small zucchini, cut into matchsticks
- 2 teaspoon(s) cornstarch, mixed with 1 tablespoon water
- 2 tablespoon(s) reduced-fat sour cream
- 1 teaspoon(s) freshly grated nutmeg
- 1/8 teaspoon(s) freshly ground pepper, or to taste
- 3/4 cup(s) freshly grated Parmesan cheese, divided
- 1 tablespoon(s) chopped fresh parsley
Bean Salad

Salad: Mix all ingredients lightly, marinate overnight in dressing
- Salad:
- 1 can thin green beans
- 1 can wax beans
- 1 can small peas
- 1 can mushrooms
- 2-3 carrots, chopped
- 2-3 celery stalks, chopped
- 1/2 onion, chopped
- 1 can shoepeg corn
- Dressing:
- 3/4 c. sugar
- 1/3 c. vegetable oil
- 2/3 c. vinegar
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/3 c. Wish-Bone Italian dressing
Cheesy Potatoes

- Heat margarine, cream and Velveeta until melted, stirring constantly
- 1 pt. half and half or milk
- 2 - 2 lb. Ore Ida Southern Style frozen hashbrowns
- 1 lb. Velveeta cheese
- 2 sticks margarine
- Minced, dried onion
Country Fried Steak

- 2 large egg whites, lightly beaten
- 1/4 cup(s) cornmeal
- 1/4 cup(s) whole-wheat flour
- 1/4 cup(s) cornstarch, divided
- 1 teaspoon(s) paprika
- 1 pound(s) cube steak, cut into 4 portions
- 3/4 teaspoon(s) kosher salt, divided

Apricot Nectar Salad (aka Bunny Jello)

- 2 pkgs. orange Jello
- 1 bag miniature mashmellows
- 1 envelope Dream Whip, prepared according to directions
- 1/2 c. sugar
- 2 Tbsp. flour
- 1 egg
- 1 c. nectar
- dash of salt
