Creamy Pasta with Ham and Broccoli

Preheat oven to 425 degrees
- 3/4 pound broccoli, trimmed and cut into florets
- 1 tablespoon extra-virgin olive oil
- Coarse salt and ground pepper
- 6 ounces wide egg noodles
- 5 ounces cream cheese, room temperature
- 6 ounces thinly sliced deli ham, cut into 3/4-inch pieces

Banana Nut Cake With Cream Cheese Frosting

- Butter, for greasing pans
- 3 cups all-purpose flour, plus more for pans
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt

- 3/4 cup vegetable oil
- 4 large ripe bananas, mashed
- 1 cup chopped pecans
- 1 1/2 teaspoons vanilla extract
- 1 (8-ounce) package cream cheese, at room temperature
- 1/2 cup butter (1 stick), at room temperature

- Cook's Note: This recipe is not formulated for a wedding cake, but for a normal size everyone can use. Increase as needed if you are making tiered or extra large cakes.

Winter Vegetable Soup

This quick one-pot soup is perfect after a busy day
- 2 tablespoons butter
- 1 medium onion, cut into 1/2-inch dice
- 2 garlic cloves, coarsely chopped
- Coarse salt and ground pepper
- 1 pound acorn squash, peeled, seeded, and cut into 1-inch chunks
- 1 bunch kale ( 3/4 pound), ribs cut away and discarded, leaves torn
- 5 1/2 cups (43.5 ounces) low-sodium chicken broth
- 1 can (14 ounces) cannellini beans, rinsed
- 3 sprigs thyme
- Grated Parmesan, for serving (optional)
Sausage, Mozzarella, and Broccoli Rabe with Shells

You can substitute a mild sausage, such as sweet Italian, for the spicy variety
- 2 tablespoons extra-virgin olive oil
- 1 large onion, chopped
- 3 sprigs thyme
- Coarse salt and ground pepper
- 2 garlic cloves, chopped
- 3 links spicy Italian sausage (3/4 pound total), casings removed
- 1 tablespoon all-purpose flour
- 1 can (28 ounces) whole peeled tomatoes
- 8 ounces medium shell pasta
- 1 bunch broccoli rabe (about 1 pound), trimmed and coarsely chopped
- 6 ounces fresh mozzarella, cut into 1/2-inch pieces
- 1/4 cup grated Parmesan
Caesar Salad

If you can't find ciabatta, a similar crusty, rustic loaf of bread can be substituted
- Croutons
- 5 tablespoons extra virgin olive oil
- 1/2 teaspoon garlic paste from 1 medium clove (see note)
- 1/2 - 3/4 loaf ciabatta , cut into 3/4-inch cubes (about 5 cups) (see note)
- 1/4 cup water
- 1/4 teaspoon table salt
- 2 tablespoons finely grated Parmesan cheese
- Salad
- 3/4 teaspoon garlic paste from 1 large clove (see note)
- 2 - 3 tablespoons juice from 1 to 2 lemons
- 1/2 teaspoon Worcestershire sauce
- 6 anchovy fillets , patted dry with paper towels, minced fine, and mashed to paste with fork (1 tablespoon) (see note)
- 2 large egg yolks (see note)
- 5 tablespoons canola oil
- 5 teaspoons extra virgin olive oil
- 1 1/2 ounces finely grated Parmesan cheese (about 3/4 cup)
- Ground black pepper
- 2 - 3 romaine hearts , cut crosswise into 3/4-inch-thick slices, rinsed, and dried very well (8 to 9 lightly pressed cups)
Brussels Sprouts with Bacon and Cheese
