Creamy Avocado Dip With Scallions

Heat oil in a small saucepan over medium
- 1 tablespoon neutral vegetable oil
- 3 large scallions, white and pale-green parts thinly sliced, dark-green parts trimmed, finely chopped
- 3/4 teaspoon kosher salt, plus more
- 1 avocado, coarsely chopped
- 3/4 cup low-fat plain Greek yogurt
- Tortilla chips or pita chips (for serving; optional)
Gluten Free Vanilla Cake Mix

Place all of the ingredients for that mix in a large bowl and whisk well
- 1 1/2 cups (210 g) all purpose gluten free flour
- 3/4 teaspoon xanthan gum (omit if your blend already contains it)
