- 4 radishes, chopped
- 4 scallions, chopped
- 1/3 seedless cucumber, chopped
- 1 cup shredded carrots, available in produce section
- 3 tablespoons white wine vinegar

- 1/4 cup ketchup
- 1/4 cup extra-virgin olive oil, eyeball it
- 1 teaspoon garlic powder

- 1 large potato, per person
- 1/4 cup chopped celery, per person (include leaves)
- 1/4 cup chopped onion, per person
- 1/4-1/2 cup milk or 1/4-1/2 cup half-and-half or 1/4-1/2 cup cream

Horseradish Mayonnaise

- Ingredients
- 1 (5-inch) piece of horseradish root (use about 4 big tablespoons, grated)
- 1 cup good mayonnaise
- Juice of 1/4 lemon
- Dash hot sauce (recommended: Tabasco)
