  • The Soup:
  • 2 tablespoon olive oil
  • 4 cloves garlic. thinly sliced
  • 1 1 lbs head escarole, washed and coursely chopped
  • 8 cups chicken stock
  • salt and pepper to taste
  • grated parmesan cheese
