Escarole Soup with Tiny Meatballs

Mix the milk and breadcrumbs together in a small bowl and allow to soak for 5 minutes
- The Meatballs:
- 1/2 cup milk
- 1/2 cup breadcrumbs
- 1/2 lbs pork finely ground
- 1/2 beef finely ground
- 1 egg beaten
- 2 teaspoons finely chopped fresh sage
- 1/4 teaspoon grated lemon zest
- 2 tablespoons grated parmesan cheese
- salt and white pepper to taste
- 2 cloves garlic crushed
- 1 tablespoon olive oil
- The Soup:
- 2 tablespoon olive oil
- 4 cloves garlic. thinly sliced
- 1 1 lbs head escarole, washed and coursely chopped
- 8 cups chicken stock
- salt and pepper to taste
- grated parmesan cheese
Mexican lasagna

Cook lasagna Brown chicken in oil
- 1 box lasagna
- 1 pound chicken breast cut into pieces
- 2 T oil
- 1 medium green pepper chopped
- 1/4 C chopped onion
- 2 tsp chili powder
- 2 C (16oz) ricotta cheese
- 1 C (8oz) montery jack cheese
- 1 egg
- 2 C salsa
turkey chili

This is a very simple and hearty chili with plenty of flavor
- 1 1/2 teaspoons olive oil
- 1 pound ground turkey
- 1 onion, chopped
- 2 cups water
- 28 ounce can canned crushed tomatoes 16 ounce can canned kidney beans drained, rinsed, and mashed
- 1 tablespoon garlic, minced
- 2 tablespoons chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cayenne pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper

Twice Baked Potato Cassarole

Preheat the over to 400 degrees
- 10 large russet baking potatoes (about 7 lbs total)
- 8 tablespoons (one stick) plus 1 tablespoon unsalted butter at room temperature.
- 1 cup sour cream
- 1/2 heavy cream
- 2 teaspoons salt
- 1 1/2 teaspoons freshly ground black pepper
- 3/4 lbs bacon, cooked until crisp and crumbled
- 1/2 lbs sharp white cheddar, cut into cubes
- 3/4 lbs mild cheddar, grated (3 cups)

- 3 tablespoons olive oil

- 6 boneless breasts
- 6 thin slices of lean baked ham
- 6 oz swiss cheese cut into 6 sticks
- 1/4 cup flour
- 3 T butter
- 1 4oz can mushrooms
- 1/2 c water
- 1/3 c dry white wine
- 1/4 cup heinz 57 sauce
