Buttermilk Fried Chicken

If there's a better fried chicken, I haven't tasted it
- For dredging and frying:
- Two 2 1/2- to 3-pound chickens (see note)
- Chicken Brine (see recipe from this book), cold
- Peanut or canola oil for deep-frying
- 1 quart buttermilk
- Kosher salt and freshly ground black pepper
- Coating:
- 6 cups all-purpose flour
- 1/4 cup garlic powder
- 1/4 cup onion powder
- 1 Tbsp plus 1 tsp. paprika
- 1 Tbsp plus 1 tsp. cayenne
- 1 Tbsp plus 1 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- ground fleur de sel or fine sea salt
- rosemary and thyme sprigs for garnish

- 3 bunches small radishes with greens attached
- 2 tablespoons extra-virgin olive oil
- Salt and freshly ground pepper
- 2 tablespoons unsalted butter
- 2 tablespoons fresh lemon juice

1. Combine ingredients 2 through 12 in blender and puree till smooth to make chimichurri sauce

- 1 package of Rossi Pasta Zucchini Linguini
- 1/2 jalapeno
- 2 tablespoon red wine vinegar
- 1/2 cup cilantro
- 1/2 tablespoon oregano
- 1 tablespoon honey
- 1 lime-juiced
- 1/2 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 12 oz. shoulder tender steak
- 2 cups grape tomatoes-cut in halves-season with salt/pepper

One-Pot Budget Meal
- 2 Tbsp olive oil
- 1 lb fully cooked hot Italian sausage, cut into 1/2-inch cubes
- 1 large onion, chopped
- 2 large carrots, peeled, chopped
- 2 large parsnips, peeled, chopped
- 2 large celery stalks, chopped
- 2 1/2 tsp dried Italian seasoning blend
- 1 lb brown lentils
- 3 quarts low-sodium chicken broth
- 1 5-oz package baby spinach leaves
BAKED AVOCADO FRIES

Preheat oven to 450. Coat avocado slices in the four, then egg, then panko
- 1/4 cup flour
- 1 tsp kosher salt
- 2 large eggs, beaten
- 1 1/4 cups panko (Japanese bread crumbs)
- 2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges
- Grated parmesan for serving (optional) Mary Note: Not optional in my opinion.

1 Make simple syrup by heating the sugar and water in a small saucepan until the sugar is dissolved completely
- 1 cup sugar (can reduce to 3/4 cup)
- 1 cup water (for the simple syrup)
- 1 cup lemon juice
- 3 to 4 cups cold water (to dilute)
