- 1 cup boiling water
- 1/2 cup chopped dates
- 4 large eggs
- 2 cups mashed, very ripe bananas (about 4)
- 3/4 cup granulated sugar
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 1/2 cups brown rice flour
- 1/2 cup sorghum flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/3 cup butter, melted
- 1/2 cup chopped walnuts
Spinach Salad w/ Roasted Beets and Dried Fruit

- 1 lb. beets, scrubbed and trimmed
- 1/2 cup fresh orange juice
- 1/3 cup dried goji berries
- 1 Tbs. Dijon mustard
- 1 Tbs. balsamic vinegar
- 2 Tbs. olive oil
- 10 oz. baby spinach leaves
- 1/3 cup dried cranberries (apple-juice sweetened)

Preheat the oven to 350°
- 1 cup pure maple syrup
- 3 Granny Smith apples—peeled, cored and cut into eighths
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 3 large eggs
- 3/4 cup buttermilk
- 1 tablespoon pure vanilla extract
- 1 1/2 sticks unsalted butter, softened
- 1 1/3 cups sugar
- Crème fraîche, for serving
Triple-Layer Chocolate Macaroon Cake

- 1 2/3 cups heavy cream
- 10 1/2 ounces bittersweet chocolate, chopped
- 3 1/2 ounces milk chocolate, chopped
- 4 large eggs
- 1 1/2 cups sugar
- 4 2/3 cup dried unsweetened finely grated coconut (10 ounces)

- 1 cup Thai sweet or sticky rice, available in Asian groceries
- 1 can coconut milk, unshaken
- 3 tablespoons raw or white sugar, divided
- 1 teaspoon salt, divided
- 1/2 teaspoon cornstarch (or tapioca flour, available in Asian groceries or in gluten-free section)
- 2 ripe mangos
- Toasted sesame seeds and mint, to garnish

- Covered saucepan
- Steamer basket
- Small saucepan
Chicken Chilaquiles

In a small bowl, combine the paprika, chili powder, cayenne, cumin, sugar, and 1/4 teaspoon of the salt
- 3 1/2 tablespoons paprika
- 2 1/2 tablespoons chili powder
- 1/2 teaspoon cayenne
- 1/4 teaspoon ground cumin
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 3 tablespoons cooking oil
- 3 tablespoons flour
- 2 cloves garlic, minced
- 3 cups canned low-sodium chicken broth or homemade stock
- 1 1/3 pounds boneless, skinless chicken breasts (about 4 in all)
- 1/4 teaspoon fresh-ground black pepper
- 1/2 pound tortilla chips
- 1/4 pound feta, crumbled (about 3/4 cup)
- 1/2 cup sour cream
- 1 red onion, sliced thin
- 1/2 cup cilantro leaves

- 1/2 container Duncan Hines Creamy Home-Style Dark Chocolate Fudge Frosting
- 32 oz. candy melts or candy coating
- 2 tsp. shortening or veg. oil
- Lollipop sticks
- Styrofoam block
- Decorations for cake pops i.e. coconut, nuts, candy

- 2 lb Grass-Fed Ground Beef
- 2 batches Taco Seasoning (recipe at the bottom of the post)
- 3 tsp Arrowroot Starch
- 1 Tbsp Olive Oil (optional)
- 1 large Yellow Onion, diced
- 2 Bell Peppers (any color), diced
- 3 Plum Tomatoes (or one big Tomato), seeded and diced
- 1 can Black Olives, sliced
- 1 small can Diced Green Chiles (optional)
- 1 batch Paleo Cornbread (leave out the honey)
