- Directions:
- 2 c. romain lettuce
- 1/2 chopped orange
- 100 g. chicken breast
- 1/4 t. Chinese 5 spice powder
- 1/8 t. garlic salt
- 1 package sweetner
- 2 sesame flavored melba toast rounds
- Citrus dressing
- ●Cook and chop chicken.
- ●Toss lettuce, orange and chicken with 5 spice, garlic salt and sweetner.
- ●Sprinkle with crumbled sesame rounds.
- ●Spoon on Citrus dressing.
LEMON ICEBOX PIE III

- 1 3/4 C. Vanilla Wafer cracker crumbs
- 2 T. sugar
- 6 T. butter, melted
- 3 large eggs, separated
- 1 (14 oz.) can sweetened condensed milk
- ½ C. fresh lemon juice
- 2 tea. lemon rind
- 2 T. sugar
- 1 C. whipping cream
- 1 T. powdered sugar
- ½ tea. vanilla extract
- Garnish: quartered lemon slices
- ●Combine first 3 ingredients; press onto bottom and 1 inch up sides of a 9-inch springform pan. Chill at least 1 hour.
- ●Whisk egg yolks; add condensed milk and lemon juice and rind.
- ●Beat egg whites at high speed with an electric mixer until foamy; gradually add 2 T. sugar beating until soft peaks form. Fold into yolk mixture; spoon into prepared crust.
- ●Bake at 325 F. for 15 to 20 minutes or until set and lightly browned. Cool on a wire rack; cover and chill 8 hours.
- ●Beat whipping cream at high speed with electric mixer until slightly thickened; add powdered sugar and vanilla, beating until soft peaks form.
- ●Remove sides of springform pan and dollop whipped cream around top of pie.

- Directions:
- 3 tablespoons butter, divided
- 1 tablespoon all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1-1/2 cups milk
- 4 cups thinly sliced peeled potatoes (about 2 pounds)
- 1 medium onion, finely chopped
- 1 small green pepper, finely chopped
- 1/2 cup dry bread crumbs
- 3/4 cup shredded cheddar cheese
- ●In a small saucepan, melt 2 tablespoons butter; stir in flour, salt and pepper. Gradually stir in milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened.
- ●In a greased 1-1/2-qt. baking dish, arrange half the potatoes, onion and green pepper in layers; cover with half of the sauce. Repeat layers.
- ●Cover and bake at 350 degrees for 35 minutes.
- ●Melt remaining butter; combine with bread crumbs and sprinkle over potatoes. Bake, uncovered, about 40 minutes longer or until potatoes are tender.
- ●Sprinkle with cheddar cheese. Let stand for 5 minutes before serving.
BASIL CHEDDAR SCONES

- 2-1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 cup cold butter, cubed
- 1 egg
- 1 cup whole milk
- 1 cup (4 ounces) shredded cheddar cheese
- 1/4 cup prepared pesto sauce
- Directions
- ●In a large bowl, combine flour and baking powder. Cut in butter until mixture resembles coarse crumbs.
- ●In another bowl, combine the egg, milk, cheese and pesto. Stir into flour mixture just until moistened.
- ●Turn onto a lightly floured surface; knead 8-10 times.
- ●Transfer to a greased baking sheet. Pat into a 10-in. circle; cut into eight wedges but do not separate.
- ●Bake at 400 degrees for 20-25 minutes or until golden brown. Serve warm.

- 2 2 2 tablespoons Dijon mustard
- 4 4 to 3/4 8 chops (1/2 to 3/4 inch thick and 8 ounces each)

- Directions
- ●In a small saucepan over low heat, cook and stir preserves and mustard until preserves are melted; set aside.
- ●Top with onions.

BACON CHEESE FRITTATA

- 6 eggs
- 1 cup milk
- 2 tablespoons butter or margarine, melted
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup chopped green onions
- 5 bacon strips, cooked and crumbled
- 1 cup shredded Cheddar cheese
- ●In a bowl, beat eggs, milk, butter, salt and pepper.
- ●Pour into a greased 11-in. x 7-in. x 2-in. baking dish. Sprinkle with onions, bacon and cheese.
- ●Bake, uncovered, at 350 degrees F for 25-30 minutes or until a knife inserted near the center comes out clean.
GRAIN AND NUT WHOLE WHEAT PANCAKES

- 1 1/2 cups old-fashioned oatmeal
- 1 1/2 cups whole wheat flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups buttermilk
- 1 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1/3 cup sugar
- 3 tablespoons chopped walnuts (optional)
- ●Grind the oats in a blender or food processor until fine.
- ●In a large bowl, combine ground oats, whole wheat flour, baking soda, baking powder, and salt.
- ●In another bowl, combine buttermilk, milk, oil, egg, and sugar with an electric mixer until smooth. Mix wet ingredients into dry with a few swift strokes. Stir in nuts, if desired.
- ●Lightly oil a skillet or griddle, and preheat it to medium heat. Ladle 1/3 cup of the batter onto the hot skillet; cook the pancakes for 2 to 4 minutes per side, or until brown.
GROUND BEEF CASSEROLE

- 2 lb ground beef
- 1 onion, chopped
- salt and pepper to taste
- 1 (11 oz) can shoepeg corn, drained
- 1/2 c. pimentos, chopped
- 1 (10 3/4 oz) can cream of chicken soup
- 1 (10 3/4 oz) cream of mushroom soup
- 1 (8 oz) carton sour cream
- 1 (5 1/2 oz) package noodles, cooked and drained
- cracker crumbs and butter for topping
- Brown meat and onion together in skillet; drain; salt and pepper to taste.
- Add corn, pimentos, soup and sour cream. Rinse soup can with small amount of water and add to mixture.
- Add noodles and pour into greased casserole dish.
- Top with cracker crumbs and dot with butter.
- Bake at 350 F for 30 minutes.
BAKED OATMEAL

- 3 cups rolled oats
- 1 cup brown sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 2 eggs
- 1/2 cup melted butter
- 2 teaspoons vanilla extract
- 3/4 cup dried cranberries
- Directions
- ●Preheat oven to 350 degrees F.
- ●In a large bowl, mix together oats, brown sugar, cinnamon, baking powder, and salt.
- ●Beat in milk, eggs, melted butter, and vanilla extract. Stir in dried cranberries.
- ●Spread into a 9x13 inch baking dish.
- ●Bake in preheated oven for 40 minutes.
