Spicy Shrimp

Adapted from Pioneer Woman's version of BBQ shrimp New Orleans style
- 3 pounds unpeeled shrimp(21-26 count or larger); I use tiger shrimp from Costco
- 1/2 cup extra-virgin olive oil
- kosher salt and freshly-ground black pepper (a lot)
- 3 lemons, halved
- 1/4 cup to 1/2 cup Worcestershire Sauce
- Tabasco or other hot sauce
- 1 stick butter
Lamb Brochettes -- Marrakech Style

As served at the Dejmaa el Fna in the heart of Marrakech
- Marinade:
- 1/4 cup extra virgin olive oil
- 1/2 onion, grated
- 2 tablespoons cilantro, minced
- 2 tablespoons parsley, minced
- 1 tablespoon sweet Paprika
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1/4 cup lemon juice
- 1 teaspoon pepper
- Meat:
- 1 kg lamb, cut into 3/4" cubes
- Lettuce or mint leaves (for garnish)
- Fresh Tomato Salsa:
- 2 ripe tomatoes, peeled, seeded and coarsely chopped
- 2 scallions, tops included, finely chopped
- 4 fresh spearmint leaves, minced
- 1/4 teaspoon sugar
- salt and freshly-ground pepper to taste
- Accompaniments:
- Moroccan or French bread
- Harissa or other hot sauce
- Kosher salt and ground cumin
- Equipment:
- Mijmar or charcoal grill
- Flat skewers
Mustard Cream Pan Sauce

Makes enough for 4 steaks
- 1 tablespoon unsalted butter, cut into 4 pieces and chilled
- 1 shallot, minced
- 1/2 cup red wine
- 1 teaspoon brown sugar
- 1/2 cup low-sodium beef broth
- 1/4 teaspoon fresh tarragon, minced
- 2 tablespoons heavy cream
- 1 tablespoon whole grain or dijon mustard
- Salt and pepper
Santa Maria Salsa

A must have accompaniment for grilled tri-tip
- 2 pounds ripe tomatoes, cored and chopped
- 2 teaspoons salt
- 2 medium jalapeño chiles, diced
- 1 small red onion, diced
- 1 celery rib, diced
- 1 garlic clove, minced
- 1/4 cup juice from two limes
- 1/4 cup cilantro, finely chopped
- 1/8 teaspoon dried oregano
- 1/8 teaspoon Worcestershire sauce

- 2 tablespoons packed light brown sugar
- 2 tablespoons paprika
- 1 tablespoon table salt
- 1 tablespoon ground black pepper
- 1 teaspoon cayenne pepper
- Glaze:
- 2 tablespoons packed light brown sugar
- 2 tablespoons ketchup
- 2 tablespoons white vinegar
- 2 tablespoons beer
- 1 teaspoon hot sauce
- Beer and Chicken:
- 2 (12-ounce) cans beer
- 4 crumbled bay leaves
- 2 whole chickens (3 to 3 1/2 pounds each), patted dry
- 4 cups wood chips
California BBQ Beans

Use pinquito beans, if you can find them
- 4 slices bacon, chopped fine
- 1/2 pound deli ham, chopped fine
- 1 onion, chopped fine
- 4 garlic cloves, minced
- 1 pound pink kidney beans, soaked overnight and drained
- 6 cups water
- 1 cup tomato puree
- 1/2 cup Las Palmas brand chili sauce or bottled taco sauce
- 5 tablespoons packed light brown sugar
- 1 tablespoon dry mustard
- Salt
- 1/4 cup cilantro, finely chopped
- 2 tablespoons cider vinegar
Braised Lamb Shanks

Serve this with polenta, cous cous or mashed potatoes
- 6 lamb shanks, 3/4 to 1 pound each, trimmed of excess fat
- Table salt
- 1 tablespoon canola oil
- 2 medium onions, sliced thick
- 3 medium carrots, peeled and cut crosswise into 2-inch pieces
- 2 medium ribs celery, cut crosswise into 2-inch pieces
- 4 medium cloves garlic , minced
- 2 tablespoons tomato paste
- 1 tablespoon herbes de Provence, OR 1 teaspoon ea. dried thyme, rosemary & marjoram
- 2 cups red wine, preferably Shiraz
- 3 cups low-sodium chicken broth
- Ground black pepper
Grilled Stuffed Pork Chops

- 1/4 cup barbecue sauce
- 1 cup shredded smoked gouda or cheddar cheese
- 4 boneless loin chops, about 1-1/2" thick (about 8 ounces each)

- 1 teaspoon pepper
- 3/4 teaspoon garlic salt
