  • 3 pounds unpeeled shrimp(21-26 count or larger); I use tiger shrimp from Costco
  • 1/2 cup extra-virgin olive oil
  • kosher salt and freshly-ground black pepper (a lot)
  • 3 lemons, halved
  • 1/4 cup to 1/2 cup Worcestershire Sauce
  • Tabasco or other hot sauce
  • 1 stick butter

  • Marinade:
  • 1/4 cup extra virgin olive oil
  • 1/2 onion, grated
  • 2 tablespoons cilantro, minced
  • 2 tablespoons parsley, minced
  • 1 tablespoon sweet Paprika
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/4 cup lemon juice
  • 1 teaspoon pepper
  • Meat:
  • 1 kg lamb, cut into 3/4" cubes
  • Lettuce or mint leaves (for garnish)
  • Fresh Tomato Salsa:
  • 2 ripe tomatoes, peeled, seeded and coarsely chopped
  • 2 scallions, tops included, finely chopped
  • 4 fresh spearmint leaves, minced
  • 1/4 teaspoon sugar
  • salt and freshly-ground pepper to taste
  • Accompaniments:
  • Moroccan or French bread
  • Harissa or other hot sauce
  • Kosher salt and ground cumin
  • Equipment:
  • Mijmar or charcoal grill
