- 2 2 2 servings cooked grits
- 2 2 2 tablespoons olive oil
- 1/2 1/2 1/2 cup diced tasso ham*
- 2 2 2 tablespoons diced leeks
- 2 2 2 tablespoons diced onion
- 2 2 2 tablespoons diced green peppers
- 20 20 to medium to large shrimp, peeled and de-veined, with tails on
- 1 to 2 1 to 2 2 tablespoons white wine
- 1 1 1 cup heavy cream
- Salt and pepper
- Green onion tops, chopped
Squash Casserole

Cook squash in boiling water to cover in a large skillet 8 to 10 minutes or just until tender
- Ingredients
- 4 pounds yellow squash, sliced
- 4 tablespoons butter or margarine, divided
- 1 large sweet onion, finely chopped
- 2 garlic cloves, minced
- 2 1/2 cups soft breadcrumbs, divided
- 1 1/4 cups shredded Parmesan cheese, divided
- 1 cup (4 ounces) shredded Cheddar cheese
- 1/2 cup chopped fresh chives
- 1/2 cup minced fresh parsley
- 1 (8-ounce) container sour cream
- 1 teaspoon salt
- 1 teaspoon freshly ground pepper
- 2 large eggs, lightly beaten

- 1/4 cup low-fat sour cream or Greek yogurt
- 1 small jalapeo, seeded and thinly sliced
- 2 tablespoons minced red onion
- 2 tablespoons chopped cilantro
- 5 tablespoons fresh lime juice
- Kosher salt and freshly ground pepper
- 1 small head of napa cabbage, shredded (4 cups)
- 2 tablespoons vegetable oil, plus more for brushing
- 2 pounds thick red snapper fillets with skin, cut crosswise into ten 2-inch-wide strips
- Ten 7-inch flour tortillas, warmed
- 2 medium tomatoes, thinly sliced
- Hot sauce, for serving
- Lime wedges, for serving
Fish or shrimp marinade

- 1 tsp paprika
- 1/2 tsp cayanne pepper

- 1 tsp salt (optional)
- 1 tsp honey or brown sugar
- 1 tsp or more of cumin
- 1/2 tsp worchestersire sauce
- 1 lime juiced

- 3 tablespoons extra-virgin olive oil
- 3 tablespoons unsalted butter
- 5 cloves garlic, chopped
- Kosher salt
- Pinch of red pepper flakes
- 8 1/2 8 1/2-inch-thick slices crusty bread
- 1 1/4 pounds large shrimp, peeled and deveined, tails intact
- 3/4 cup dry white wine or low-sodium chicken broth
- Grated zest and juice of 1/2 lemon, plus lemon wedges for serving
- 1/3 cup chopped fresh parsley
- 1/3 cup chopped fresh chives

- Freshly ground black pepper to taste
