- 1 cup julienned sweet red pepper

- 2 cups sliced fresh mushrooms
- 2 medium tomatoes, cut into wedges
- 6 green onions, cut into 1/2-inch pieces

Creamy Chicken, Leeky and Dumpling Soup

- 2 tablespoons extra-virgin olive oil
- 3 leeks, white and tender green parts split lengthwise and thinly sliced crosswise
- 5 ribs celery from the heart with leafy tops,

Old Fashioned Potato Salad

- 3/4 cup pompeian extra virgin olive oil
- 3/4 cup pompeian red wine vinegar (this brand is excellent in this dish)
- 1/4 cup sugar
