Skillet Apple Crisp

1. FOR THE TOPPING: Adjust oven rack to middle position and heat oven to 450 degrees
- Topping:
- 3/4 cup (3 3/4 ounces) unbleached all-purpose flour
- 3/4 cup pecans , chopped fine
- 3/4 cup old-fashioned rolled oats (see note)
- 1/2 cup (3 1/2 ounces) packed light brown sugar
- 1/4 cup (1 3/4 ounces) granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon table salt
- 8 tablespoons (1 stick) unsalted butter , melted
- Filling:
- 3 pounds Golden Delicious apples (about 7 medium), peeled, cored, halved, and cut into 1/2-inch-thick wedges (see note)
- 1/4 cup (1 3/4 ounces) granulated sugar
- 1/4 teaspoon ground cinnamon (optional)
- 1 cup apple cider
- 2 teaspoons juice from 1 lemon
- 2 tablespoons unsalted butter

- CREPE BATTER:
- 1 cup milk
- 1/4 cup cold water
- 2 eggs
- 1 cup all-purpose flour
- Pinch salt
- 1 tablespoon sugar
- 3 tablespoons unsalted butter, melted, plus more for sauteing the crepes
- CHEESE FILLING:
- 1 1/2 cups ricotta cheese
- 4 ounces cream cheese
- 3 tablespoons confectioners' sugar (I used 5 tablespoons.)
- 1 teaspoon vanilla
- 1 tablespoon orange zest
- 1 egg
- Strawberry sauce (optional); strawberry preserves work well, too
- 1 quart strawberries hulled, sliced
- 1/4 cup sugar
- 1/4 cup water
- 1 teaspoon cornstarch

- 4 chicken breasts, boneless
- 1 apple, peeled and chopped
- 1 large shallot, chopped fine
- 2 tablespoons fresh French tarragon, parsley, or sage
- 1 teaspoon garlic powder
- 1/2 cup fine bread crumbs
- 1/2 cup cheddar cheese, grated
- 1/2 cup monterey jack cheese, grated
- 1/4 cup apple cider
- 2 tablespoons boiled cider
- 2 to 3 tablespoons white wine

Quick Whole Wheat Rolls (like in an hour!)

I recently posted how to make one-hour rolls, using unbleached white flour
- 1/2 cup low-fat milk (I used 1%)
- 1/8 cup sugar
- 1 teaspoon salt
- 1-1/2 tablespoons butter
- 1-1/2 packages (or 3-1/2tsps.) of dry active yeast
- 3/4 cups warm water (105F – 115F)
- 2 cups all-purpose flour
- 1 cup whole wheat flour
- 2 Tablespoons vital wheat gluten (optional, but helpful... Bob's Red Mill or King Arthur Flour sells it)
- 2 tablespoons butter, melted (optional for brushing onto baked rolls)
