Scallops with Cherry-Tarragon Sauce

I love scallops because they are like the Fillet Mignon of the Sea
- 1 1/2 pounds wild-caught sea scallops
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon ground black pepper
- 1 tablespoon extra-virgin olive oil
- 2 shallots, chopped
- 1 generous splash (about 1/4 cup) white wine (I used Sauvignon Blanc) or substitute 2 tablespoons rice vinegar
- 1/4 cup low-sodium chicken stock (omit if using vinegar)
- 1/2 pound cherries (about 2 cups), pitted and quartered
- 1 tablespoon fresh chopped tarragon
Thai-Style Chicken & Pineapple Rice

Our family really likes Thai food
- GARNISH:
- 2 cups cold rice (day old is best)
- 1-2 cups raw chicken (cooked can work, too), cut into bite-size pieces
- 1/2-1 cup red bell pepper, finely chopped
- 1-2 Tablespoons chicken stock**
- 2 Tablespoons peanut oil (or any quality nut oil or vegetable oil)
- 1 Tablespoon chili garlic sauce*
- 2 Tablespoons fish sauce
- 1 Tablespoon oyster sauce
- 1 cup diced pineapple (fresh is best)
- 1 cup frozen peas (optional)
- 1 egg
- 1/2 - 1 cup cashews (optional)
- 2 scallions, finely sliced on the bias
- 1/2 cup chopped fresh cilantro or basil
- *chili garlic sauce is pretty easy to find in the Asian section of your grocery store. I used this, because I didn't have any hot chilis and it worked out perfectly, where I didn't need to add 2 clove
- **the chicken stock is to help cook the chicken without adding too much oil. Use sparingly, as needed
Homemade Mexican Seasoning Blend

Rather than buying pre-made seasoning blends, I make my own by saving empty spice bottles
- 2 Tbsp. chili powder
- 2 Tbsp. garlic powder
- 2 Tbsp. ground cumin
- 2 Tbsp. oregano
Easy Fresh Apple Cake: King Arthur Flour

Directions 1) Preheat the oven to 350°F
- For the topping:
- 2 or 3 large tart green apples (such as Granny Smith), cored and sliced
- 1/3 cup brown sugar
- 3 tablespoons boiled cider
- 1 teaspoon Apple Pie Spice, or your favorite combination of sweet spices
- 1/4 teaspoon salt
- For the Cake:
- 1 1/3 cups King Arthur Unbleached All-Purpose Flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2/3 cup warm milk
- 1 large egg
- 6 tablespoons melted butter
- 1 teaspoon vanilla extract
- coarse sparkling sugar to sprinkle on top, optional
Chicken Mole Torta (Mexican Chicken Sloppy Joes)

Mole (Mo-Lay) sauce is something very unique, and there are countless versions of how it’s made
- Chicken Mole:
- 2 dried ancho chiles
- 3 tablespoons peanut or vegetable) oil
- 1 medium yellow onion, minced
- Kosher salt and freshly ground black pepper
- 1 chipotle pepper in adobo sauce, minced
- 2 1/2 tablespoons semisweet chocolate, chopped
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 2 cloves garlic, smashed
- 3 cups chicken stock
- One 14 1/2-ounce can diced tomatoes, drained
- 1/4 cup almond butter
- 1/4 cup raisins
- 2 tablespoons toasted sesame seeds
- 4 bone-in skin-on chicken breasts (3 1/2 to 4 pounds)
- Sandwich Build:
- One 16-ounce can refried beans (with chorizo if available)*
- 4 fresh bolillo rolls, warmed (Note, I made my own or any kind of sturdy sandwich rolls will work)
- 2 cups finely shredded iceberg lettuce
- Pickled jalapenos
- Fresh cilantro leaves
- Tomatillo Salsa, recipe follows
- Lime wedges, for garnish
- NOTE: I made my own mash black beans
- Tomatillo Salsa: (don't skip this, or buy bottled if you wish)
- 1 pound fresh tomatillos, husk removed and rinsed well
- 2 cloves garlic, peeled and left whole
- 1 jalapeno pepper, stemmed and halved
- 1/2 yellow onion, cut into thirds
- 1 tablespoon vegetable oil
- Kosher salt and freshly ground black pepper
- 3/4 cup fresh cilantro
- Juice of 1 lime
