Strawberry Blintzes

If you've never had blintzes, brace yourself! These are thin crepes, filled with a sweet ricotta filling, then wrapped (like a burrito) and warmed in the oven. These are delicious served with a dollop of sour cream. My preference is to use strawberry jam, or you can make a warm strawberry or blueberry compote. To save time, you can make the crepes ahead of time-- even freezing them. These take about an hour to make, but they are well worth the trouble.
