Ingredients

  • 1 lb elbow macaroni noodles
  • 1/3 cup veg oil
  • 1/3 cup flour
  • 6 cups whole milk
  • 8 oz velveeta cheese cubed
  • 8 oz yellow American cubed
  • 8 oz monterrey jack cheese cubed
  • 2 oz grated co – jack cheese
  • 2 tsp salt
  • 1 tsp dry mustard

Preparation

Step 1

Bring water to boil …cook noodles 7 min…then drain rinse with cold water set aside..

Mix oil & flour over low heat until it turns light brown
( blonde roux )

Warm 6 cups of milk in micro wave …then add to roux…stir over med low heat until it thickens…
add salt & dry mustard
Turn heat off then add all of the cheese..stir until melted…..

Put noodles in a 9 x 13 casserole pan

Pour sauce over noodles then mix…

Cover with foil…bake @ 350 for 1 hour…..

Top with grated co–jack right out of the oven….
