Ingredients

  • 2 eggs
  • 2 tsp grated orange rind
  • 1 C orange juice
  • 1/3 C butter, melted
  • 1 C Nabisco 100% Bran cereal
  • 3/4 C chopped dried apricots
  • 1 3/4 C flour
  • 1/2 C packed brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 C cranberries

Preparation

Step 1

Whisk together eggs, orange rind and jiuce, and butter. Stir in cereal and apricots; let stand 5 minutes.

Mix flour, brown sugar, baking powder and salt in large bowl. Stir cereal mixture into dry ingredients, stirring just until moistened.

Fold in cranberries. Spread enevly in greased 9x5x3 loaf pan.

Bake at 350F for 55-60 minutes, or until tester comes out clean.

Cool in pan 10 minutes; turn out onto rack to oool completely.
