  • 1 sheet PC butter puff pastry, thawed but cold
  • 1 egg
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 lb mushrooms, sliced
  • 1 cup whipping cream

Step 1

Preheat oven to 425 degrees.

Unroll puff pastry onto cutting board, reserving parchment paper it packaged in. Line large cookie sheet with reserved parchment paper.

Cut puff pastry into quarters. Cut each piece on the diagonal to make eight triangles. Place on prepared baking sheet.

Beat egg with 1 tablespoon water, brush lightly score parallel lines on pastry, spacing 1/2 inch apart and being careful not to cut through pastry.

Bake in centre of oven for 10-12 minutes or until puffed and golden brown.

In a large frying pan, heat oil over medium heat, cook onions, salt and pepperm for 5 minutes. Stir in mushrooms and cook for 5-10 minutes or until mushrooms have released liquid and liquid has evaporated. Stir in cream, and cook until sauce has thickened.

Cut each pastry triangle i half horizontally. Place triangle bottoms on individual serving plates; top each with 1/4 cup warm mushroom mixture, then a triangle top.
