Ingredients

  • Topping:
  • 2 cups flour
  • 1/2 cup sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • grated rind of 1 lemon
  • 1 egg
  • 1 cup milk
  • 1/2 cup margerine, melted
  • 1 cup blueberries
  • 1/2 cup melted margerine
  • 1 tbsp. lemon juice
  • 1/2 cup white sugar

Preparation

Step 1

Mix flour, sugar, baking powder, salt and lemon rind in a large bowl. Beat egg in medium size bowl, add milk and melted margerine. Add egg mixture to dry ingredients, stir until just mixed (batter will be lumpy). Stir in blueberries. Fill muffin cups 2/3 full and bake at 425 degrees for 20 minutes.

Topping:

Combine melted margerine and lemon juice. Measure sugar in small bowl. Take slightly cooled muffins and dunk top into butter and then into sugar.
