- 1 1/4 teaspoons yeast
- 1/4 cup warm water
- 3 cups water room temperature
- 4/5 cup (200 grams) Biga
- 7 1/2 (1000 grams) flour
- 1 T. plus 1 t. salt

Step 1
Prepare as Ciabatta
First Rise
Place in bowl and let rise until tripled 3 hours
do not punch down
Four work surface, cut into 2 or 3 equal pieces, Flatten each piece and roll up lenghtwiase turning 90 degrees. Pace loaves on floured parchment paper ocover with heavy towl or cloth and let rise until doubled. 1 hour.
5 to 10 minutes before dimple with fingers.
Bake at 450. 50 to 60 for larger loaves, 30 to 35 for smaller.
