Crunchy Chili Onion Rings

Ingredients
- 6 C vegetable oil (for deep frying)
- 1 lb Vidalia onion, peeled, but into 1/3-inch slices, separated
- 3 C buttermilk
- 2 C all purpose flour
- 1 C yellow cornmeal
- 3 Tbl chili powder
- 2 Tbl ground cumin
- 1 Tbl salt
- 1 tsp cayenne pepper
- Chopped cilantro, optional

Preparation
Step 1
Heat oil in heavy large, deep skillet over med-high heat unti it reaches 375 degrees.
Meanwhile, combine onion rings and buttermilk in large bowl.
Mix flour, cornmean, chili powder, cumin, salt and cayenne in another large bowl.
Remove 1/3 of onion rings from buttermilk, add to flour mixture and toss to coat.
Fry rings unti golden brown, adjusting heat as needed to maintain oil temperature, about 3 minutes. Remove and drain on paper towels. Repeat with remaining onion rings.
Sprinkle with cilantro if desired, and serve.
