Ingredients
- 1 1/2 cup macadamia nuts, chopped
- 1 cup unsweetened coconut
- 1/4 cup maraschino cherries, chopped
- 1/3 cup liquid honey
- 2 1/2 cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground ginger
- 1/2 tsp cinnamon
- 1 cup butter, softened
- 1 1/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 3/4 cup orange juice

Step 1
Preheat oven to 325F. Butter a 9 inch square baking pan. combine nuts, coconut, cherries and honey. Spread evenly in prepared pan. Set aside.
Combine flour, baking powder and soda, ginger and cinnamon.
Beat butter until fluffly. Beat in sugar and eggs, one at a time. Stir in vanilla. add flour mixture to butter mixture in three additions, alternating with orange juice. Stir just until well combined.
Spread batter over nut mixture. Bake in oven for 65 minutes or until cake bounces back when lightly touched. Let cool on rack for 5 minutes. Turn out onto rack and spoon nuts that are stuck to the pan back onto cake.
