Ingredients

  • 3 eggs
  • 2 cups of sugar
  • 1 cup of vegetable oil
  • 2 teaspoons of vanilla
  • 2 cups RAW, PEELED and GRATED zucchini
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 Tablespoon baking powder
  • 3 teaspoons cinnamon
  • 1 cup chopped pecans--optional

Preparation

Step 1

Beat eggs until light and fluffy. Add sugar, oil, vanilla and mix lightly but well. Stir in zucchini. Combine flour, salt, soda, baking powder and cinnamon. Add to zucchini mixture and stir until well blended. Add nuts (if desired) and pour into well-greased and floured loaf pans. Bake in a pre-heated oven for 1 hour at 350 degrees. Cool in pan a few minutes before turning out on a rack to cool.
