Beef Empanadas-

Ingredients
- 1-14oz pkg of empanada shells
- 1 - 8 oz pkg of shredded cheddar and Monterey jack cheese
- 1-12 oz jar of sofrito sauce
- 1 pound of ground beef
- 1 tsp of garlic powder or to taste
- 1 bottle of vegetable oil

Preparation
Step 1
Thaw out your empanada shells. Brown ground beef until cooked and then drain. Pour jar of sofrito sauce over ground beef and then add garlic powder to taste. Simmer beef sauce on medium heat until well combined and warmed through.
You are going to fry the empanadas so you need to put oil in skillet just to cover the bottom. Heat oil on med-high.
Put about 11/2 tsp of beef sauce on empanada shell and cover with a tsp of shredded cheese. Seal and crimp the empanda shell so nothing will come out while you fry them. Place in skillet and turn over when each side browns. This will only take a few minutes on each side.
Thats it! They really don't take that long. My husband loves them. I have to make them all the time. I made about fifty for his birthday and I had none left, everyone loved them. You can have rice or refried beans on the side, but you really don't need it the empanadas are really filling
