Ingredients
- 4 chicken breasts sliced into strips
- 2 T. olive oil or butter
- 1 small yellow onion, sliced
- 3 cloves garlic
- 4 red and/or orange bell peppers, roasted on grill or under broiler and sliced
- 6 roma tomatoes, cut into 4 quarters then roasted on grill or under broiler
- 14.5 oz can diced tomatoes
- 1/4 cup chicken broth
- salt and pepper to taste
- 2-3 t. crushed red peppers (optional)
- 3 t. oregano
- 3 t. basil

Step 1
Heat olive oil (or butter) over medium heat. Add onion and cook about 2 minutes. Add garlic cook while stirring for another 30 seconds. Add chicken and cook until browned and cooked through (about 10-12 minutes).
Add the rest of the ingredients. Cover and cook for about 15 minutes, stirring periodically.
