Ingredients

  • 4 chicken breasts sliced into strips
  • 2 T. olive oil or butter
  • 1 small yellow onion, sliced
  • 3 cloves garlic
  • 4 red and/or orange bell peppers, roasted on grill or under broiler and sliced
  • 6 roma tomatoes, cut into 4 quarters then roasted on grill or under broiler
  • 14.5 oz can diced tomatoes
  • 1/4 cup chicken broth
  • salt and pepper to taste
  • 2-3 t. crushed red peppers (optional)
  • 3 t. oregano
  • 3 t. basil

Preparation

Step 1

Heat olive oil (or butter) over medium heat. Add onion and cook about 2 minutes. Add garlic cook while stirring for another 30 seconds. Add chicken and cook until browned and cooked through (about 10-12 minutes).

Add the rest of the ingredients. Cover and cook for about 15 minutes, stirring periodically.
