Ingredients

  • Honey Glaze:
  • 2 cups sugar
  • 1 cup vegetable oil
  • 1/4 cup honey
  • 3 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp vanilla extract
  • 3 cups peeled and chopped apples (McIntosh, or Granny Smith)
  • Parve Vanilla ice cream or sliced apples (optional)
  • 1/2 cup confectioners sugar
  • 1/2 cup honey
  • 1/2 tsp vanilla extract

Step 1

Preheat oven to 350
Grease and flour a 12 cup Bundt pan.
Beat sugar, oil, and honey at medium speed with an electric mixer until well blended. Add eggs, 1 at a time, beating just until blended.
Combine flour and next 4 ingredients. Gradually add to sugar mixture, beating at low speed just until blended. Stir in vanilla and apples.
Bake for 55 to 60 minutes, or until toothpick comes clean. Cool in pan on a wire rack for 15 minutes; remove from pan, and place on a wire rack over wax paper. Let cake fully cool.
Honey glaze: in a mixing bowl whisk sugar with honey and vanilla to a maple sugar consistency. The consistency should be perfect for glazing, as the honey dissolves the sugar and it should not need any touching up. However if you want to thin it a bit, add 1-2 tbsp of hot water to thin it our just enough to glaze. If you want to thicken it a bit add 1-2 tbsp confectioners sugar just enough to thicken it, but not too thick, as it will be poured as a glaze over the cake.
Pour honey glaze over cooled cake.
If there is extra glaze, pour over individual cake portions with a few slices of an apple on the side.
You may serve with a scoop of ice cream on the side.
