  • 3 cups Sugar
  • 1 1/4 cup Butter ; softened
  • 8 ounce Cream cheese ; softened
  • 1 tablespoon Lemon juice
  • 2 teaspoon Vanilla
  • 1 teaspoon Lemon extract
  • 1/2 teaspoon Orange extract
  • 1/8 teaspoon Salt
  • 6 Eggs
  • 3 cups Soft As Silk Flour
  • ~~ -- Glaze -- ~~
  • 1 cup Confectioners Sugar
  • 2 teaspoon Lemon rind ; grated
  • 2 tablespoon Lemon juice
  • 1 tablespoon Butter ; softened

Step 1


Heat oven to 325 degrees. Grease and flour tube pan or 2 loaf pans (9x5x3).

Beat sugar, butter and cream cheese until fluffy. Beat in lemon juice, extracts and salt. Beat in eggs, one at a time. Add cake flour. Beat until smooth. Spread in pan.

Bake tube pan 90 minutes/loaf pan 75 minutes - until golden brown.

Cool 10 minutes, remove from pan and cool completely.

Spread lemon glaze over cake and allow it to run down sides.
