CRUNCHY HOT CHICKEN SALAD

Ingredients
- 2 1/2 cups chicken -- diced and cooked
- 1 cup celery (or celery seed ) -- finely chopped
- 2 teaspoon onion -- chopped
- 1/2 cup almonds -- sliced
- 1 can cream of chicken soup
- 1 1/2 cups cooked rice
- 1 teaspoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3/4 cup mayonnaise
- 1/4 cup water
- cheddar cheese -- shredded
- dry bread crumbs or crushed potato chips

Preparation
Step 1
Combine all ingredients except the mayonnaise and water, cheese and bread crumbs.
Stir mayonnaise and water together until smooth. Pour over chicken mixture - Stir well.
Spoon into greased two-quart shallow baking dish. Cover and refrigerate overnight.
Bake at 425 degrees for twenty-five or thirty minutes until bubbling around edges. Sprinkle with shredded cheddar and dry bread crumbs or crushed potato chips. Put back into oven until melted.
