Don't dare call this a "Derby Pie," or Kern's Kitchen, the maker of the trademarked Derby Pie, will shamelessly sue you (yes, even you, the individual who might unassumingly post your own recipe on a website like this for no financial gain). That being said, here is my favorite version of this classic. It's my favorite, not because it's so much like the original (which I've never eaten), but because it's the closest I've found to the sinfully delicious version that we used to sell as a fundraiser during my band-geek days.

Almost Derby Pie 1 Picture

Ingredients

  • 1 Cup sugar
  • 1 Cup light corn syrup
  • 4 eggs
  • 1/2 Cup (1 stick) butter, melted
  • 1/4 tsp salt
  • 1 Cup chopped pecans or walnuts (this is optional, but the traditional derby pie contains walnuts. The fundraiser pie contains pecans. It is also delicious without any nuts).
  • 1 Cup chocolate chips
  • 1 tsp vanilla extract
  • 2 Tbsp quality bourbon (optional)

Preparation

Step 1

1. Preheat oven to 300 degrees F.


2. Combine sugar, corn syrup, and eggs in a mixing bowl. Beat at low speed until well blended. Stir in remaining ingredients and pour into a 9" unbaked pie shell with either aluminum foil or a silicone pie shield around the edges to avoid over-browning of the crust as it bakes.


3. Bake until the center of the pie is set. This may be 45-50 minutes if your oven's thermostat runs hot, 50-60 minutes if your oven's thermostat is accurate, or 60 minutes to an 1 hour and 20 minutes if your oven's thermostat runs cool.


4. Allow to cool to room temperature before serving. This pie may be served with whipped cream.
