- 1 tilapia or cod filet, or two small island perch filets, thawed and patted dry
- 1 tsp. Hellmann's light
- 1/2 tsp. grated lemon or lime rind
- 1 1/2 tbsp. panko
- 1/2 tbsp. finely grated parmigiano
- Freshly ground pepper and Malden salt

Preparation
Step 1
* Preheat Breville oven to 400 degrees with rack in lowest position.
* Place fish on parchment-lined baking sheet. Spread with mayo and grate lemon rind over. Sprinkle with salt and pepper then top with a few teaspoons of panko/parmigiano blend.
* Bake for 12 - 20 minutes, until crumbs are golden brown.
