Ingredients

  • 2 medium zucchini, about 6 to 7 inches long
  • 1/3 cup Pillsbury BEST® All Purpose Flour
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground white or black pepper
  • 2 large eggs, lightly beaten
  • 1 cup bread or cracker crumbs
  • 1 cup Crisco® Butter Shortening
  • OR Crisco® Butter Flavor All-Vegetable Shortening Sticks
  • 1 tablespoon fresh lemon juice (optional)

Preparation

Step 1

1.WASH zucchini; trim ends. Cut in half crosswise, then cut each half into 8 lengthwise strips.

2.COMBINE flour, salt and pepper in resealable plastic bag. Place beaten eggs and crumbs in separate shallow dishes. Shake a few strips of zucchini at a time in flour mixture, dip in beaten egg, then press in crumbs.

3.HEAT shortening in a deep fryer to 365ºF. Fry zucchini a few at a time about 4 to 5 minutes, turning once, until golden brown. Sprinkle with lemon juice if desired.
