Ingredients
- 2 1/2 cups quinoa (dry)
- 1 bunch green curly kale
- 1 bunch curly parsley
- 1/2 red onion, finely diced
- 1 shallot, finely diced
- 1 small clove garlic, finely minced
- 2/3 cup olive oil
- 4 lemons, juiced and zested
- 3 limes, juiced and zested
- sea salt
- freshly ground pepper

Step 1
Quinoa: Two parts water to one part quinoa.
In a large saucepan,bring the water to a boil, add the quinoa, cover and simmer for 20 minutes. Let cool.
Chop the kale and parsley into fine pieces. The end result should look fluffy and dry. Place into large mixing bowl.
Finely dice the onion, shallot and garlic. Add to the bowl.
Add the quinoa and mix well.
Add remaining ingredients, taste and adjust seasonings if necessary.
