Carrot, Apple & Onion Soup

Ingredients

  • 5 pounds carrots, peeled and diced
  • 4 apples, peeled, cored, and diced
  • 1 large onion, diced
  • 6 cups chicken or vegetable broth
  • 1 stick butter
  • 1/2 tsp. nutmeg
  • 1 tsp. salt and pinch of black pepper
  • 2 cans evaporated milk
  • Whole milk
  • 2 tablespoons sugar (optional)

Preparation

Step 1

Cook first 7 ingredients together until vegetables are soft.

Blend with an immersion blender until soup is smooth.

Add 2 cans of evaporated milk to a six-cup measuring cup and add whole milk to equal 6 cups total. Add sugar to taste if desired.

Can be served with a dollop of creme fraiche and chopped fresh chives.
