Ingredients
- For Cookies:
- 3/4 C all-purpose flour
- 3/4 C unsweetened cocoa powder
- 1/2 tsp salt
- For Filling:
- 2 sticks unsalted butter - softened
- 2 C sifted powdered sugar
- 1/2 C granulated sugar
- 6 egg whites
- 1/4 C heavy cream
- 1/2 tsp mint extract
- 8 oz white chocolate bar - chopped
- green food coloring

Preparation
Step 1
Preheat oven 350 degrees. Line baking sheets with parchment paper and fit a pastry bag with a medium tip.
For the cookies:
Whisk flour, cocoa and salt together, set aside.
Cream butter and both sugars in a bowl with mixer on medium speed until light and fluffy.
Add egg whites a little at a time, beating to fully incorporate.
Mix in flour-cocoa mixture. Transfer batter to piping bag.
Pipe batter onto baking sheets in strips 3/4 inch wide and 2 inches long. Bake until crisp around edges, 18 - 20 minutes. Cool in pan.
For the Filling:
Microwave cream and extract in a bowl until boiling. Pour over chocolate in a bowl. Let mixture stand 5 minutes, then stir until smooth.
Add food coloring a drop at a time until desired color is reached, stir to blend.
To Assemble:
Spread filling onto one cookie and top with another to form sandwich.
