  • 24 paper muffin cups
  • 1 package vanilla wafers
  • Cherry, blueberry or raspberry pie filling
  • 3 pkg (8 oz.) cream cheese, softened
  • 4 eggs
  • 2 tsp. lemon juice
  • 1 cup sugar

Step 1

Preheat oven to 350 degrees, mix sugar, cheese, eggs and lemon juice until smooth Line cupcake pans with paper muffin cups. Place one vanilla wafer in the bottom of each muffin cup. Spoon cheese mixture over wafers to fill cups 3/4 full. Bake in preheated oven for 18 to 20 minutes. Cool. Cupcakes will sink in the middle while cooling. Spoon pie filling on each cupcake and refrigerate at least 1 hour. Cupcakes may be topped with a whipped topping if desired.
