Carrot Cookies with Orange Icing

Ingredients

• 1 cup Shortening or 1/2 shortening and 1/2 margarine
• 3/4 cup Sugar
• 2 Eggs
• 1 cup Carrots ; cooked and mashed
• 2 cups All purpose flour
• 2 teaspoon Baking powder
• 1/2 teaspoon Salt
• 3/4 cup Coconut ; shredded
• ~~ -- Orange Icing -- ~~
• 3 tablespoon Butter
• 2 teaspoon Orange peel ; grated
• 1 1/2 cup Confectioners Sugar
• 1 tablespoon Orange juice

Preparation

Step 1

Mix shortening, sugar, eggs and carrots. Add combined dry ingredients. Mix well. Stir in coconut.

Drop by teaspoonfuls onto lightly greased cookie sheet - 2 inches apart.

Bake at 400 degrees for 8-10 minutes until no impression is left when touched.

Cool and frost.
