- 4 large sweet potatoes, peeled and cut into 1/2-inch-thick rounds
- 2 tablespoons vegetable oil
- 1/2 cup firmly packed brown sugar
- 1/4 cup butter
- 1/4 cup light corn syrup
- 1/4 cup water

Preparation
Step 1
1.Preheat oven to 450˚. Spray a rimmed baking sheet with nonstick cooking spray.
2.In a large bowl, combine sweet potatoes and oil; tossing gently to coat. Arrange potatoes in a single layer on prepared baking sheet. Bake for 30 minutes.
3.In a medium saucepan, combine brown sugar, butter, corn syrup, and ¼ cup water. Bring to a boil over medium-high heat; reduce heat, and simmer for 8 minutes. Pour hot syrup over potatoes before serving.
