Ingredients
- 3 cups flour
- 4 tea. baking powder
- 1 1/2 tea. salt
- \1 cup sugar
- 1 tea. cinnamon
- 1 tea. nutmeg
- 1 cup raisins, dried cranberries or chopped nuts
- 1 cup from 1 can (15 oz) Libby's pure pumpkin
- 1/2 cup vegetable oil
- 1 cup milk
- 2 eggs

Step 1
Grease mini muffin tins with cooking spray.
Combine all dry ingredients in a large bowl. Cut in vegetable oil with pastry blender until mixture is fine. Add 1 cup of the Libby's pumpkin, milk and eggs; ,mix until just moistened.
Spoon into muffin pans, filling 2/3 full.
Bake in preheated 400 degree oven for 15 minutes; remove to wire racks.
Sprinkle with powdered sugar, if desired.
Makes about 60 mini muffins
