Refrigerator Bran Muffins

Ingredients
- 1 (15 oz.) box Raisin Bran
- 5 tsp. soda
- 5 cups flour
- 1 tsp. cloves
- 2 tsp. salt
- 1 tsp. cinnamon
- Egg substitute equal to 4 eggs
- 1/2 cup of oil
- 1 quart of low fat buttermilk
- 1/2 cup of applesauce
- 3 cups sugar
- 2 tsp. vanilla
- 1 tsp. nutmeg

Preparation
Step 1
Mix bran, sugar, flour, soda, salt, and spices in
extra large bowl. Add eggs, oil, applesauce,
buttermilk, and vanilla. Mix well. Store in
covered container. Bake in muffin pan for
about 15 minutes in 400 degree oven.
1 muffin is a serving. (Regular size muffin pan)
By using egg substitute and applesauce you greatly
cut the fat content. I haven't tried sugar
substitute, but this too might be an option.
Also, get the low fat buttermilk. There is a
difference in it and regular butter milk.
If you don't want to make them from scratch,
Krusteaz Brand makes wonderful fat-free muffin
mixes. My favorites are Cranberry Orange and
Wild Blueberry. Duncan Hines has a Kellogg's
All-Bran Apple Cinnamon muffin mix that is also
very low fat and low calorie.
Most muffins fixed this way are from 130 to
160 calories.
