Ingredients

  • 1 lb chicken breast (cooked and shredded)
  • 1 lb navy beans
  • 8 cups fat free chicken broth (low sodium)
  • 1 1/2 cups green chilies
  • 1 tsp minced garlic
  • 1 medium onion, chopped
  • 2 pkgs taco seasoning

Step 1

Soak beans overnight, next day put in pot with chicken broth on high and bring to a boil. Cook and shred the chicken and then add the pkgs of taco seasoning with 2 cups of water. Cook on low until thickened. In saucepan, saute green chilies, garlic and onion in small amount of olive oil. Add the chilies mixture and the taco-seasoned chicken to the pot of beans. Continue to simmer on low for 2 hours.
