Ingredients
- 3 lbs. boneless port roast
- 2 cups flour plus 1 tablespoon Living the Gourmet Dry Herb Rub
- 4 eggs (beaten)
- 3 cups seasoned bread crumbs plus 1 tablespoon Signature Spice Mix
- 4 tablespoons olive oil

Preparation
Step 1
Slice pork as thin as possible
Set up flour, eggs, and bread crumbs in separate bowls.
Dip the pork first in the flour, then eggs and finally in bread crumbs.
In large frying pan add olive oil and heat, (not too much or oil will splatter).
Add breaded pork thins to heated olive oil.
Sauté pork for about 4 minutes on each side.
