Ingredients

  • 1 1/4 pounds pitted dates
  • 3 tablespoons butter, softened
  • 1 1/4 cups boiling water
  • 3/4 cup plus 2 tablespoons sugar(6 ounces)
  • 2 teaspoons salt
  • 4 teaspoons baking soda
  • 1 cup chopped walnuts(4 ounces)
  • 2 large eggs, slightly beaten
  • 2 tablespoons honey
  • 14 ounces bread flour

Preparation

Step 1

In large mixing bowl, put the dates with the butter in boiling water and mix on low to medium speed with the paddle for at least 10 minutes until it reaches a jam consistency.

Add all remaining ingredients except flour. Mix for 3 minutes on low to medium speed, scraping bowl to incorporate well.

Add bread flour and mix well until well blended.

Pour equal amounts into 3 greased and lightly floured foil tins, 8 by 3 1/4 by 2 3/4 inches. Bake in preheated 300F oven for 75 minutes. Invert onto parchment-lined pan and leave on pan until cooled.
