Ingredients

  • 1 1/2 pound Ground beef ; lean
  • 3/4 cup Frozen chopped onions ; thawed
  • 1/3 cup Bread crumbs ; seasoned
  • 1 Egg ; slightly beaten
  • 1/4 cup Barbeque sauce
  • 1 package Taco Seasoning
  • 1/2 teaspoon Salt
  • 24 ounce Frozen cut russet potatoes
  • 1/2 cup Evaporated milk
  • 1 tablespoon Butter
  • 1/2 cup Bacon ; crumbled
  • 1/2 cup French fried onions
  • Salt and pepper ; to taste
  • 1 cup Mexican blend cheese ; shredded

Preparation

Step 1

Preheat oven to 375 degrees.

In a large bowl, combine ground beef, onions, bread crumbs, egg, barbeque sauce, taco seasoning and 1/2 tsp. salt. Mix thoroughly, then press into bottom of a 9 inch square pan. Bake 20 - 25 minutes or until cooked through. Carefully pour off drippings.

Meanwhile, microwave potatoes according to package directions. In a medium bowl, mash cooked potatoes with milk and butter. Stir in bacon and fried onions. Season to taste with salt and papper.

Spread over meatloaf to the edges of the pan, sprinkle with cheese. Return to oven for 15 minutes. Slice and serve. Makes 6 servings.
